Fall is coming to Florida and the nicer temperatures roll in it causes an influx of out of towners bellies to rumble before a day out on the town.
Maybe they will be sport fishing or just enjoying a lazy day on the ocean. Whatever it may be, people can fuel up here before enjoying what is to come.
After 22 years of service in this town the place is getting a much needed rehab to best serve the blend of dedicated clientele, new comers, and travelers on their way through the area as tourist season ramps up here in the port town of Stuart.
Sammy Js is located on the south end of town and many months ago the owners here were focused on adding more seats by occupying the space next door with the idea for almost nearly doubling the seating.
Acts of demolition like cutting out existing walls made room, then spackling, a lot of fresh paint, and adding a new black and white checkerboard floor were some of the checks on the list of the front of the house face lift.
Other things like beefing up the infrastructure to handle this double the projected volume is if not more important but definitely equally as of importance in terms of long-term success.
One thing was an additional drink station that was constructed into the new section to accommodate a quick delivery to quench the patrons’ thirst from the 17 new tables.
When the customers sitting in the 60s diner style bar seats glance at the pass-through window, they’ll notice a bright demeanor gleaming back at them.
Only because the kitchen was completely refurbished. Two new fabulous 7 burner flat top grills have replaced the old ones and now are ready to goldenize every stuffed pancake, cheesy hashbrown, and omelet concoction one can dream of.
To accommodate the heat of the kitchen a new 32 foot exhaust system efficiently disposes even the worst of flares ups. With new steam wells and fryer the upgrade here is unmatched.
To counter the heat from the weather and hungry kids, Sammys added a huge double door freezer, along with a drawer and standing refrigeration units to lend a hand to the walk-in fridge.
Don’t forget about the dish pit! The unsung heroes of the restaurant biz were not ignored here. On the new side a large space was dedicated just to the cleanliness and sanitation of the environment.
With plumbing being put in for a stunning double capacity dish machine and three compartment sink in which their smaller old counterparts were moved from the old kitchen area to make room for the chef’s new toys.
So, are they ready? I’d say an astounding yes! and just in time as well. A lot of time and planning went into this project led by three entrepreneurial young women with a goal of feeding breakfast and lunch to the masses of this quaint little town. And that’s among their other projects.
Maybe some blood, definitely some sweat, but certainly love is what helped guide this local family-owned restaurant to achieve a lofty goal of continuing their little legacy. One I know is deep in the heart of the locals and in the soul of Sammys Js.
