One of the things I like to do is cook! It is a creative way of expressing myself and is a great reminder of the elements of Transport, Conversion, and Storage too. One must be in the present moment, to be successful at making a recipe delicious. So, pay attention, so you can create this amazingly wholesome vegetable chowder. You, as well as your loved ones will LOVE it! Bon Appetit!
Ingredients: (Remember to:Rinse/wash all vegetables)
- One stick of butter(salted)
- 1 16oz package of frozen corn
- 2 sweet potatoes (small) {peeled and diced}
- 4 celery stalks diced
- 2 small zucchini diced
- 2 carrots diced
- 2 small onions diced
- Fresh or frozen chunks of butternut squash(8oz)
- 6 cloves of garlic diced
- 4 Bay leaves
- 2 tsp of: Dried thyme, cumin, turmeric, rosemary, sage, parsley
- 8 cups of Chicken Broth
- One whole bag of spinach(make sure you clean it)
- Salt and pepper
Cooking Directions: In a large pot, melt the butter on medium/low heat, add the onion and garlic. Sautee the onions and garlic first, then add the corn, sweet potatoes, bay leaves, seasonings, carrots, celery, zucchini, butternut squash. Sautee all vegetables about 15 minutes or until the veggies are brown. Add the chicken broth and boil. Reduce heat to medium-low and simmer for about 45 minutes, until the vegetables are tender. Remove Bay leaves, Puree 2 1/2 cups of soup in a blender. Return the puree to the remaining soup in the pot. Add all of the spinach, and simmer until it is wilted (no more than 5 to 10 minutes) Season to taste with salt and pepper.
